Ingredients

  • 1 Grilled chicken breast
  • 2 cups Mixed greens
  • 1 cup Cherry tomatoes
  • 1 Avocado, diced
  • 1 Cucumber, chopped
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Start by grilling the chicken breast until cooked through and no longer pink in the center. Let it rest before slicing.
  2. In a large bowl, combine mixed greens, cherry tomatoes, diced avocado, and chopped cucumber.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create a dressing.
  4. Add the grilled chicken slices to the salad and drizzle with the dressing.
  5. Toss lightly and serve immediately.

Notes
