Description

A hearty and flavorful vegetable lasagna, perfect for a satisfying meal.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups mushrooms, sliced
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions, then drain.
  3. Heat olive oil in a skillet over medium heat, then sauté the mushrooms and spinach until softened.
  4. Mix ricotta cheese with salt and pepper in a bowl.
  5. Spread a layer of marinara sauce at the bottom of a baking dish.
  6. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the vegetable mixture, and a third of the mozzarella.
  7. Repeat the layering process, finishing with a final layer of noodles, marinara sauce, mozzarella, and parmesan cheese.
  8. Bake in the oven for 30 minutes until bubbly and golden.
  9. Let it cool for 10 minutes before slicing and serving.

Notes

You can add your favorite vegetables to the layers for added flavor.
