Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, chopped
- 2 cups mushrooms, sliced
- 2 cups marinara sauce
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions, then drain.
- Heat olive oil in a skillet over medium heat, then sauté the mushrooms and spinach until softened.
- Mix ricotta cheese with salt and pepper in a bowl.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the vegetable mixture, and a third of the mozzarella.
- Repeat the layering process, finishing with a final layer of noodles, marinara sauce, mozzarella, and parmesan cheese.
- Bake in the oven for 30 minutes until bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
Notes
You can add your favorite vegetables to the layers for added flavor.
