Description

A quick and easy family meal featuring tender chicken in a sweet and tangy glaze, served with colorful vegetables and rice.


Ingredients

  • 1 pound chicken breast
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 cup rice (any type)
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • Green onions, chopped (for garnish)

Instructions

  1. Start by preparing your marinade. In a medium-sized bowl, mix together the soy sauce, honey, minced garlic, and grated ginger.
  2. Place the chicken breasts in the bowl and coat them well with the marinade. Cover and let marinate in the fridge for at least 30 minutes.
  3. While the chicken marinates, cook the rice according to the package instructions.
  4. Once the chicken has marinated, heat a skillet over medium-high heat and add the chicken along with any remaining marinade. Cook for about 6-8 minutes on each side.
  5. In a separate saucepan, sauté the mixed vegetables over medium heat for about 5-7 minutes, until tender but still crisp.
  6. Now it’s time to plate! Serve a scoop of rice topped with the glazed chicken and sautéed vegetables, and garnish with chopped green onions.

Notes

For extra flavor, consider adding sesame oil or seeds as garnish. Leftovers make excellent lunches.
