Ingredients

- 2 cups cottage cheese
- 1 medium eggplant, diced
- 1 medium zucchini, diced
- 1 medium yellow squash, diced
- 1 red onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 cup shredded cheese (optional)
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add garlic and red onion, sauté until softened.
- Add eggplant, zucchini, and squash, and cook until tender, stirring occasionally.
- Mix the sautéed vegetables with cottage cheese, salt, pepper, and Italian seasoning in a large bowl.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Sprinkle shredded cheese on top if desired.
- Bake for 25-30 minutes or until the top is golden and bubbly.
- Garnish with fresh herbs and serve warm.
