Description

A healthy and comforting veggie bake packed with protein from cottage cheese and bursting with flavors.


Ingredients

  • 2 cups cottage cheese
  • 1 medium eggplant, diced
  • 1 medium zucchini, diced
  • 1 medium yellow squash, diced
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded cheese (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add garlic and red onion, sauté until softened.
  3. Add eggplant, zucchini, and squash, and cook until tender, stirring occasionally.
  4. Mix the sautéed vegetables with cottage cheese, salt, pepper, and Italian seasoning in a large bowl.
  5. Transfer the mixture to a greased baking dish, spreading it evenly.
  6. Sprinkle shredded cheese on top if desired.
  7. Bake for 25-30 minutes or until the top is golden and bubbly.
  8. Garnish with fresh herbs and serve warm.
