High Protein Crispy Garlic Chicken Fried Rice – a quick, protein-packed meal with golden chicken, garlic aroma, and fluffy rice.
Ingredients
2 cups cooked rice (day old works best)
2 chicken breasts or thighs, diced
2 tbsp soy sauce
1 tbsp garlic paste
2 cloves garlic, minced
2 eggs, lightly beaten
1 tsp sesame oil
2 tbsp vegetable oil
2 green onions, chopped
1/2 tsp black pepper
Instructions
1. Marinate chicken with soy sauce, garlic paste, sesame oil, and pepper for 15 minutes.
2. Heat oil in a skillet and fry chicken until golden and crispy.
3. Push chicken aside, add beaten eggs, scramble, then mix.
4. Add rice and garlic, stir-fry until evenly coated and crisp.
5. Toss everything together with green onions and serve hot.
Notes
For extra crispiness, coat chicken in cornstarch before frying.
Use cauliflower rice for a keto-friendly version.
