Description

A comforting ground turkey casserole that combines creamy filling, fresh spinach, and a cheesy topping, perfect for busy weeknights.


Ingredients

  • 1 lb ground turkey (lean)
  • 4 oz cream cheese, softened
  • 5 oz fresh spinach, chopped or whole
  • 1 cup cheddar cheese, freshly shredded
  • 1 egg
  • ½ tsp garlic powder
  • ¼ tsp salt
  • Black pepper, to taste
  • Optional: ½ cup diced red bell peppers
  • Optional: ¼ cup plain Greek yogurt
  • Optional: mozzarella instead of cheddar

Instructions

  1. Preheat the oven to 375°F and grease a 9×9 baking dish.
  2. Cook the ground turkey in a skillet over medium heat for about 6–8 minutes, breaking it up as it cooks.
  3. Stir in the garlic powder, salt, and pepper, then add the spinach and cook until it wilts, about 2–3 minutes.
  4. Reduce the heat to low and stir in the softened cream cheese until it fully melts and combines with the turkey mixture.
  5. Allow the mixture to cool for 5 minutes, then stir in the beaten egg and ½ cup of cheddar cheese.
  6. Transfer the mixture to the prepared baking dish and top it with the remaining ½ cup of cheddar cheese.
  7. Bake uncovered for 20–25 minutes, until the dish becomes bubbly and golden on top.
  8. Let it rest for 10 minutes before slicing and serving.
