Description

A delicious and easy ground turkey casserole packed with protein, creamy cheese, and fresh spinach, perfect for busy weeknights.


Ingredients

  • 1 lb ground turkey (lean)
  • 4 oz cream cheese, softened
  • 5 oz fresh spinach, chopped or whole
  • 1 cup cheddar cheese, freshly shredded
  • 1 egg
  • ½ tsp garlic powder
  • ¼ tsp salt
  • Black pepper, to taste
  • Optional: ½ cup diced red bell peppers
  • Optional: ¼ cup plain Greek yogurt
  • Optional: mozzarella instead of cheddar

Instructions

  1. Preheat the oven to 375°F and grease a 9×9 baking dish to prevent sticking.
  2. Cook the ground turkey in a skillet over medium heat for about 6–8 minutes, breaking it up for even browning.
  3. Stir in the garlic powder, salt, and pepper. Then, add the fresh spinach and cook until wilted, about 2–3 minutes.
  4. Reduce the heat to low and mix in the softened cream cheese until fully melted and combined.
  5. Let the mixture cool for 5 minutes, then stir in the beaten egg and half of the cheddar cheese.
  6. Transfer the mixture into the prepared baking dish and smooth it out evenly. Top with the remaining cheddar cheese.
  7. Bake uncovered for 20–25 minutes until the top is golden and bubbly.
  8. Let it rest for 10 minutes before slicing and serving.

Notes

Serve with a green salad or roasted veggies. Customize with different cheeses or add spices for extra flavor.
