Description

Delicious homemade bagels with a crispy crust and soft, chewy inside. Perfect for breakfast or lunch!


Ingredients

Scale
  • 1 and ½ cups (360mL) warm water (between 100–110°F)
  • 1 Tablespoon (9g) dry active yeast
  • 1 Tablespoon (15g) granulated sugar
  • 4 and ¼ cups (510g) bread flour
  • 2 teaspoons salt
  • 8 cups (1920mL) water
  • ¼ cup (84g) honey
  • Egg wash: 1 egg + 1 Tablespoon water
  • Spice blends, toppings, or seeds as desired

Instructions

  1. Combine the warm water, dry active yeast, and sugar in a large mixing bowl and let sit for about 5 minutes until frothy.
  2. Add the bread flour and salt; stir until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise for about 1 hour or until doubled in size.
  5. Boil 8 cups of water in a large pot and stir in the honey once boiling.
  6. Preheat the oven to 425°F (220°C).
  7. Punch down the risen dough, divide it into 10 equal pieces, shape into balls, and poke holes through the center to create bagels.
  8. Drop the bagels into the boiling honey-water for about 1 minute on each side.
  9. Brush with egg wash and sprinkle with desired toppings.
  10. Bake for about 20 minutes or until golden brown, then let cool on a wire rack.

Notes

Do not skip the boiling step to achieve the classic chewy texture. Experiment with different toppings for variety.
