- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup granulated sugar (for the filling)
- 2/3 cup fresh lemon juice
- 1 tablespoon lemon zest
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Cream together the softened butter and 1 cup of sugar until smooth and fluffy.
- Mix in the flour and salt until just combined. Press the dough into the bottom of the prepared pan, creating an even layer.
- Bake for 15-20 minutes until the crust is lightly golden.
- Whisk together the eggs, 1 cup of sugar, fresh lemon juice, and lemon zest until smooth.
- Pour the lemon mixture over the baked crust and return it to the oven.
- Bake for an additional 20-25 minutes until set.
- Allow to cool completely, then refrigerate for at least a few hours.
- Cut into squares and dust with powdered sugar before serving.
Notes
Use fresh lemon juice and zest for the best flavor. Don’t overbake the filling; it should have a slight jiggle when done.
