Delicious homemade lemon bars featuring a tangy lemon filling over a buttery crust, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar (for the filling)
  • 2/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cream together the softened butter and 1 cup of sugar until smooth and fluffy.
  3. Mix in the flour and salt until just combined. Press the dough into the bottom of the prepared pan, creating an even layer.
  4. Bake for 15-20 minutes until the crust is lightly golden.
  5. Whisk together the eggs, 1 cup of sugar, fresh lemon juice, and lemon zest until smooth.
  6. Pour the lemon mixture over the baked crust and return it to the oven.
  7. Bake for an additional 20-25 minutes until set.
  8. Allow to cool completely, then refrigerate for at least a few hours.
  9. Cut into squares and dust with powdered sugar before serving.

Notes

Use fresh lemon juice and zest for the best flavor. Don’t overbake the filling; it should have a slight jiggle when done.
