  • 4 tablespoons unsalted butter, softened (for frosting)
  • 2 tablespoons freshly squeezed lemon juice (for frosting)
  • 1 teaspoon lemon zest (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Combine the flour, sugar, baking powder, and salt in a large bowl.
  3. Add the softened butter into the dry mixture and mix until crumbly.
  4. Mix in the eggs, lemon juice, lemon zest, and vanilla extract until smooth.
  5. Divide the batter into the cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow the cupcakes to cool completely.
  8. Beat the frosting ingredients together until well combined.
  9. Frost the cooled cupcakes generously with the lemon buttercream.
