- ¼ cup honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 cloves garlic, minced

- 1 cup cooked rice (white or brown)
- ¼ cup fresh coriander, chopped
- 1 tablespoon lime juice
- 2 ripe avocados, sliced
- 1 tablespoon lime juice

Instructions
- Start by mixing your marinade. In a medium bowl, combine the honey, lime juice, lime zest, minced garlic, salt, and pepper. Stir everything together until well blended.
- Coat your chicken breasts in this delicious marinade. Let them soak up those incredible flavors for at least 30 minutes.
- Heat a skillet over medium heat and add a splash of oil. Once hot, cook the chicken breasts for about 6-7 minutes on each side, or until golden brown and fully cooked through.
- After cooking, let the chicken rest for a few minutes before slicing it.
- While the chicken rests, prepare the rice. In a bowl, combine cooked rice, chopped coriander, 1 tablespoon of lime juice, and season with salt and pepper to taste. Mix well.
- Slice your ripe avocados and sprinkle them with lime juice, salt, and pepper.
- Now it’s time to stack! Begin with a layer of the rice mixture on your plate, add slices of chicken on top, and finish with sliced avocado.
Notes
For maximum flavor, marinate the chicken overnight. Fresh ingredients make a noticeable difference in flavor. Avocado should be added fresh before serving.
