Ingredients

  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 avocado (sliced)
  • 2 cups cooked rice (white or brown)
  • Salt and pepper to taste
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Create the Marinade: In a bowl, mix together the honey and lime juice to create a sweet and tangy marinade.
  2. Season the Chicken: Season the chicken breasts with salt and pepper, then marinate them in the honey-lime mixture for at least 30 minutes.
  3. Cook the Chicken: Heat a skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side, or until it’s cooked through.
  4. Prepare the Base: In a serving dish, layer the cooked rice at the bottom.
  5. Add Chicken Strips: Once the chicken is cooked, slice it into strips and place it on top of the rice.
  6. Top with Avocado: Add the sliced avocado right on top of the chicken.
