- 1/4 cup honey
- 2 limes (juiced)
- 1 avocado (sliced)
- 2 cups cooked rice (white or brown)
- Salt and pepper to taste
- Fresh cilantro (for garnish, optional)
Instructions
- Create the Marinade: In a bowl, mix together the honey and lime juice to create a sweet and tangy marinade.
- Season the Chicken: Season the chicken breasts with salt and pepper, then marinate them in the honey-lime mixture for at least 30 minutes.
- Cook the Chicken: Heat a skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side, or until it’s cooked through.
- Prepare the Base: In a serving dish, layer the cooked rice at the bottom.
- Add Chicken Strips: Once the chicken is cooked, slice it into strips and place it on top of the rice.
- Top with Avocado: Add the sliced avocado right on top of the chicken.
- Garnish and Serve: If desired, sprinkle fresh cilantro on top and serve warm.
