- 3 tablespoons Honey (for marinade)

- 1 tablespoon Lime Zest
- 2 cloves Garlic (minced)

- 1 cup Jasmine Rice (or basmati)
- 2 cups Chicken Broth
- 2 pieces Avocado (diced)
- 1 small Red Onion (finely chopped)
- 1/4 cup Fresh Cilantro (chopped)
- 1 tablespoon Olive Oil
- 4 pieces Lime Wedges (for garnish)
Instructions
- Marinate the Chicken: Combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper in a bowl. Place chicken in a ziplock bag with marinade. Refrigerate for at least 30 minutes, up to 2 hours.
- Cook the Rice: Rinse the jasmine rice under cold water. Combine rice and chicken broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until tender. Fluff with a fork.
- Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Remove chicken from marinade and cook for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F (74°C). Rest before slicing.
- Prepare the Avocado Mixture: In a bowl, combine diced avocado, finely chopped red onion, and chopped cilantro.
- Assemble the Stack: Layer rice on a plate, add grilled chicken slices, top with avocado mixture, and garnish with lime wedges.
Notes
For added flavor, experiment with spices or use shrimp or tofu as alternative proteins. Serve with a light salad or steamed vegetables.
