- 1 lb boneless, skinless chicken breasts, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups chicken broth
- 1 cup sour cream
- 2 tbsp flour
- 2 tbsp olive oil
- Salt and pepper to taste
- Cooked egg noodles or rice for serving
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced chicken and cook until browned and cooked through. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the chopped onions and minced garlic. Sauté until they soften and start to smell amazing.
- Add the sliced mushrooms and cook until they’re golden brown and have released some of their moisture.
- Sprinkle the flour over the sautéed vegetables and stir to combine. Then, slowly add the chicken broth while stirring continuously.
- Bring everything to a simmer. Let it bubble until the sauce thickens.
- Stir in the sour cream, then return the cooked chicken to the skillet. Mix it all together and season with salt and pepper to taste.
- Serve your delicious stroganoff over cooked egg noodles or rice. Garnish with fresh parsley.
Notes
For added flavor, consider using high-quality chicken broth and fresh mushrooms. Adjust the creaminess to your liking with yogurt substitutes or low-fat sour cream.
