Description

A delightful coffee cake with a warm cinnamon swirl, perfect for breakfast or an afternoon treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sour cream or plain yogurt
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 1/4 cup milk (or as needed)
  • 2 tsp vanilla extract
  • 3 tbsp ground cinnamon
  • 1/3 cup all-purpose flour (for streusel)
  • 1/2 cup brown sugar (for streusel)
  • 1/4 cup cold unsalted butter, cubed (for streusel)
  • 1 cup powdered sugar (optional glaze)
  • 23 tbsp milk (optional glaze)
  • 1/2 tsp vanilla (optional glaze)

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a 9×9-inch (or 8×8) baking pan, or line the bottom with parchment paper.
  2. Whisk together 2 cups of flour, baking powder, baking soda, and salt. Set aside.
  3. Cream together 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy. Add the eggs one at a time, ensuring incorporation.
  4. Stir in the vanilla until combined, then add 1 cup sour cream (or yogurt) and 1/4 cup milk. Mix until smooth.
  5. Fold the dry ingredients into the wet mixture just until combined; a few lumps are okay.
  6. Combine 1/2 cup light brown sugar and 3 tbsp cinnamon in a small bowl. Mix in 1 tbsp softened butter until crumbly.
  7. Spread half the batter in the prepared pan. Dollop the cinnamon mixture over this and swirl gently. Top with remaining batter.
  8. Make the streusel by cutting 1/4 cup cubed butter into 1/3 cup flour and 1/2 cup brown sugar until crumbly. Sprinkle over the cake.
  9. Bake for 35–45 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  10. Allow to cool in the pan for 15 minutes before transferring to a wire rack.
  11. Whisk together 1 cup powdered sugar, 2–3 tbsp milk, and 1/2 tsp vanilla for glaze, if using. Drizzle over the cooled cake.
  12. Slice into squares and serve warm.

Notes

For a delightful touch, serve warm with coffee or tea. Can be stored in an airtight container for up to 3 days.
