A delightful coffee cake with a warm cinnamon swirl, perfect for breakfast or an afternoon treat.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup sour cream or plain yogurt
- 2 large eggs
- 1/2 cup unsalted butter, softened
- 1/4 cup milk (or as needed)
- 2 tsp vanilla extract
- 3 tbsp ground cinnamon
- 1/3 cup all-purpose flour (for streusel)
- 1/2 cup brown sugar (for streusel)
- 1/4 cup cold unsalted butter, cubed (for streusel)
- 1 cup powdered sugar (optional glaze)
- 2–3 tbsp milk (optional glaze)
- 1/2 tsp vanilla (optional glaze)
Instructions
- Preheat your oven to 175°C (350°F). Grease and flour a 9×9-inch (or 8×8) baking pan, or line the bottom with parchment paper.
- Whisk together 2 cups of flour, baking powder, baking soda, and salt. Set aside.
- Cream together 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy. Add the eggs one at a time, ensuring incorporation.
- Stir in the vanilla until combined, then add 1 cup sour cream (or yogurt) and 1/4 cup milk. Mix until smooth.
- Fold the dry ingredients into the wet mixture just until combined; a few lumps are okay.
- Combine 1/2 cup light brown sugar and 3 tbsp cinnamon in a small bowl. Mix in 1 tbsp softened butter until crumbly.
- Spread half the batter in the prepared pan. Dollop the cinnamon mixture over this and swirl gently. Top with remaining batter.
- Make the streusel by cutting 1/4 cup cubed butter into 1/3 cup flour and 1/2 cup brown sugar until crumbly. Sprinkle over the cake.
- Bake for 35–45 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Allow to cool in the pan for 15 minutes before transferring to a wire rack.
- Whisk together 1 cup powdered sugar, 2–3 tbsp milk, and 1/2 tsp vanilla for glaze, if using. Drizzle over the cooled cake.
- Slice into squares and serve warm.
Notes
For a delightful touch, serve warm with coffee or tea. Can be stored in an airtight container for up to 3 days.
