- 2 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Mix together the chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, Italian seasoning, salt, and pepper in a bowl.
- Cut a pocket into the side of each chicken breast.
- Stuff each chicken breast with the cheesy spinach filling.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken for 3-4 minutes on each side.
- Transfer the chicken to a baking dish and bake for 20-25 minutes, until cooked through.
- Let the chicken rest for a few minutes before slicing.
Notes
