Ingredients

  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese, softened
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking dish by greasing it with butter or lining it with parchment paper.
  3. Mix the flour, baking powder, cinnamon, nutmeg, and salt in a medium bowl.
  4. Cream the butter and light brown sugar until light and fluffy.
  5. Add the egg and vanilla extract, mixing until well combined.
  6. Incorporate the dry mixture into the wet ingredients, stirring until just combined.
  7. Stir in the freshly grated carrots.
  8. Prepare the cream cheese layer by beating the softened cream cheese, granulated sugar, and egg yolk until smooth.
  9. Layer half of the carrot cake batter in the dish, followed by the cream cheese mixture, and then the remaining carrot cake batter.
  10. Bake for 20-25 minutes, or until a toothpick comes out clean.
  11. Cool in the dish for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes
