- 1 large egg
- 0.5 cup unsalted butter
- 1 cup freshly grated carrots
- 4 ounces cream cheese, softened
- 1 large egg yolk
- 0.5 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare an 8×8-inch baking dish by greasing it with butter or lining it with parchment paper.
- Mix the flour, baking powder, cinnamon, nutmeg, and salt in a medium bowl.
- Cream the butter and light brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Incorporate the dry mixture into the wet ingredients, stirring until just combined.
- Stir in the freshly grated carrots.
- Prepare the cream cheese layer by beating the softened cream cheese, granulated sugar, and egg yolk until smooth.
- Layer half of the carrot cake batter in the dish, followed by the cream cheese mixture, and then the remaining carrot cake batter.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Cool in the dish for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
These bars can be served warm with whipped cream or topped with walnuts and powdered sugar.
