Ingredients

  • 1 lb Boneless, Skinless Chicken Breasts or Thighs
  • 1/4 cup Cornstarch
  • 1 piece Egg White
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • Vegetable Oil
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Garlic, minced
  • 1 tablespoon Ginger, minced
  • 23 Dried Red Chilies or Crushed Red Pepper Flakes
  • 1/2 cup Tomato Ketchup
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Chili Garlic Sauce
  • 1 tablespoon Vinegar
  • 1 tablespoon Sugar or Honey
  • 1/4 cup Water
  • Sliced Green Onions
  • Toasted Sesame Seeds
  • Thin Strips of Fried Onion or Bell Pepper

Instructions

  1. Start by cutting the chicken into bite-sized pieces. In a bowl, combine chicken, cornstarch, egg white, salt, and black pepper. Mix well to coat the chicken evenly.
  2. Heat vegetable oil in a pan over medium heat. When the oil is hot, carefully add the coated chicken pieces to the pan. Fry until golden brown and crispy. Remove and set aside on paper towels to absorb excess oil.
  3. In the same pan, add sesame oil. Toss in minced garlic and ginger, sautéing for a minute until fragrant.
  4. Add the dried red chilies or crushed red pepper flakes to the pan, adjusting the amount based on your spice preference.
  5. Pour in the tomato ketchup, soy sauce, chili garlic sauce, vinegar, sugar or honey, and water. Stir everything together to create a smooth sauce.
  6. Once the sauce starts to bubble, add the crispy chicken back into the pan. Toss until the chicken is well-coated with the sauce.
  7. Cook for another 2-3 minutes, allowing the flavors to meld.
  8. Remove from heat and serve hot.

Notes

For extra crunch, double fry the chicken pieces. Serve with steamed rice or noodles.
