- 1 can (14.5 ounces) diced tomatoes
- 2 cups spinach or kale
- 1 cup small pasta (like ditalini or orzo)
- Fresh parsley for garnish
Instructions
- In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring chicken or beef broth to a simmer over medium heat.
- Gently add the meatballs to the pot, followed by the diced tomatoes. Cook for 10 to 15 minutes until meatballs are cooked through.
- Add spinach or kale and small pasta to the pot. Cook for an additional 7 to 10 minutes until pasta is tender.
- Taste and adjust seasoning as necessary. Serve hot, garnished with fresh parsley.
Notes
For a creamier version, consider stirring in some cream just before serving. You can also use ground turkey or chicken for a leaner alternative.
