Ingredients

  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 6 cups chicken or beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups spinach or kale
  • 1 cup small pasta (like ditalini or orzo)
  • Fresh parsley for garnish

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, bring chicken or beef broth to a simmer over medium heat.
  3. Gently add the meatballs to the pot, followed by the diced tomatoes. Cook for 10 to 15 minutes until meatballs are cooked through.
  4. Add spinach or kale and small pasta to the pot. Cook for an additional 7 to 10 minutes until pasta is tender.
  5. Taste and adjust seasoning as necessary. Serve hot, garnished with fresh parsley.

Notes

For a creamier version, consider stirring in some cream just before serving. You can also use ground turkey or chicken for a leaner alternative.
