A delicious Keto Sausage and Egg Bake, perfect for brunch gatherings or meal prepping, combining sausage, eggs, and veggies for a low-carb treat.

- 1 pound breakfast sausage, casings removed
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 8 large eggs
- ½ cup heavy cream
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- Salt and freshly ground black pepper to taste
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or cooking spray to prevent sticking.
- Heat a large skillet over medium heat. Add the breakfast sausage, breaking it into small pieces with a spoon. Cook until it turns brown and is cooked through—this takes about 8 minutes. Once done, transfer it to a plate using a slotted spoon to drain any excess grease.
- In the same skillet with the flavorful drippings, add the diced onion and bell peppers. Sauté them for 3 to 4 minutes until they start to soften. Then toss in the minced garlic and cook for an additional minute until fragrant.
- Transfer the cooked sausage and sautéed vegetables into the prepared baking dish, distributing them evenly across the bottom.
- In a large mixing bowl, whisk together the eggs, heavy cream, dried oregano, smoked paprika, salt, and pepper. Make sure you get it nice and frothy! Fold in half of the shredded cheddar and mozzarella cheese into the egg mixture.
- Pour this delicious egg mixture over the sausage and vegetables in the baking dish. Sprinkle the remaining cheese on top for that ooey-gooey finish!
- Place the bake in the preheated oven and let it bake for 30 to 35 minutes. Keep an eye on it! It’s done when the egg is completely set and the top has a lovely golden brown color.
- After baking, allow it to cool for about 5 minutes. Garnish with fresh chopped parsley, cut into portions, and serve warm.

This dish can be customized with different veggies or cheeses. It’s also great for meal prep and can be refrigerated or frozen for later use.
