Description

A quick and elegant Keto dish with chicken, cherry tomatoes, and creamy sauce, perfect for weeknight dinners or special gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper. Add them to the skillet and cook until browned and cooked through, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, toss in the cherry tomatoes and cook until softened.
  5. Pour in the heavy cream and bring it to a simmer.
  6. Add the mozzarella cheese and stir until it melts and becomes creamy.
  7. Return the chicken to the skillet, cover it with the sauce, and sprinkle chopped basil on top.
  8. Cook for an additional 2-3 minutes until everything is heated through.
  9. Serve hot and enjoy!
