- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup fresh basil, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper. Add them to the skillet and cook until browned and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, toss in the cherry tomatoes and cook until softened.
- Pour in the heavy cream and bring it to a simmer.
- Add the mozzarella cheese and stir until it melts and becomes creamy.
- Return the chicken to the skillet, cover it with the sauce, and sprinkle chopped basil on top.
- Cook for an additional 2-3 minutes until everything is heated through.
- Serve hot and enjoy!
