Ingredients
2 cups all-purpose flour
1 1/2 cups sugar
1/2 cup unsalted butter, softened
2 large eggs
1 cup milk
2 tsp baking powder
1/2 tsp salt
1 tbsp lemon zest
2 tbsp lemon juice
1 1/2 cups fresh blueberries
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13 pan.
2. Whisk flour, baking powder, and salt together.
3. Cream butter and sugar until fluffy.
4. Add eggs, lemon zest, and juice.
5. Alternate adding dry mix and milk.
6. Fold in blueberries coated with flour.
7. Pour into pan and bake 30–35 minutes.
8. Cool before slicing.
Notes
Coat blueberries with flour to prevent sinking.
Store airtight for up to 5 days or freeze.
