Ingredients

  • 4 chicken breasts
  • 2 lemons (juiced)
  • 2 tablespoons chili powder
  • Salt and pepper to taste
  • 1 cucumber (diced)
  • 1 red bell pepper (diced)
  • 1/4 red onion (finely chopped)
  • 1 cup cherry tomatoes (halved)
  • 2 cups mixed greens
  • 1 cup hummus
  • Olive oil

Instructions

  1. Mix the lemon juice, chili powder, salt, and pepper in a bowl. Marinate the chicken breasts in the mixture for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  3. Combine the cucumber, bell pepper, red onion, and cherry tomatoes in a separate bowl to make the salad. Drizzle with olive oil and season with salt and pepper.
  4. Slice the grilled chicken.
  5. Assemble the bowls by placing mixed greens as a base, adding sliced chicken, and topping with cucumber salad. Serve with a generous scoop of hummus on the side.
