- 4 chicken breasts
- 2 lemons (juiced)
- 2 tablespoons chili powder
- Salt and pepper to taste
- 1 cucumber (diced)
- 1 red bell pepper (diced)
- 1/4 red onion (finely chopped)
- 1 cup cherry tomatoes (halved)
- 2 cups mixed greens
- 1 cup hummus
- Olive oil
Instructions
- Mix the lemon juice, chili powder, salt, and pepper in a bowl. Marinate the chicken breasts in the mixture for at least 30 minutes.
- Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
- Combine the cucumber, bell pepper, red onion, and cherry tomatoes in a separate bowl to make the salad. Drizzle with olive oil and season with salt and pepper.
- Slice the grilled chicken.
- Assemble the bowls by placing mixed greens as a base, adding sliced chicken, and topping with cucumber salad. Serve with a generous scoop of hummus on the side.
