Ingredients
Scale
- 1 bunch Kale
- 1/4 cup Lemon juice
- 1/2 cup Parmesan cheese, grated
- 1/4 cup Olive oil
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 cup Croutons
Instructions
- Rinse and chop the kale, then place it in a large bowl. Make sure to remove any tough stems.
- In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the kale and massage it into the leaves for a few minutes.
- Add freshly grated parmesan cheese and toss to combine.
- Top with crouton crumbles before serving.
Notes
Store in an airtight container for up to 3 days, but add croutons just before serving to keep them crunchy.
