Description

A vibrant and flavorful Lemon Parm Kale Salad, perfect for summer gatherings.


Ingredients

Scale
  • 1 bunch Kale
  • 1/4 cup Lemon juice
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 cup Croutons

Instructions

  1. Rinse and chop the kale, then place it in a large bowl. Make sure to remove any tough stems.
  2. In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the kale and massage it into the leaves for a few minutes.
  4. Add freshly grated parmesan cheese and toss to combine.
  5. Top with crouton crumbles before serving.

Notes

Store in an airtight container for up to 3 days, but add croutons just before serving to keep them crunchy.
