- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup poppy seeds
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- Zest of 1 lemon
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, baking powder, salt, and poppy seeds in a large bowl.
- Mix the milk, vegetable oil, eggs, lemon zest, lemon juice, and vanilla extract in another bowl until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool for a few minutes before transferring them to a wire rack.
