Description

Bright and zesty Lemon Poppyseed Muffins that are perfect for breakfast or as a delightful snack.


Ingredients

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup poppy seeds
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, salt, and poppy seeds in a large bowl.
  3. Mix the milk, vegetable oil, eggs, lemon zest, lemon juice, and vanilla extract in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill the muffin cups about 2/3 full with the batter.
  6. Bake for 15-20 minutes until a toothpick comes out clean.
  7. Allow to cool before transferring to a wire rack.

Notes

Don’t overmix the batter. Use fresh ingredients for the best flavor. Customize with berries or almond extract if desired.
