  • 1 avocado, diced
  • Salt and pepper to taste

Instructions

  1. Begin by boiling the diced potatoes in a pot of salted water until they are tender. Drain and set them aside, letting them cool slightly.
  2. While the potatoes are cooking, heat a skillet over medium heat and add the ground beef. Brown the meat, and be sure to mix in the taco seasoning along with a little water according to the packet instructions.
  3. In a large bowl, layer the cooked potatoes as your hearty base.

  5. Add shredded cheese, lettuce, and diced tomatoes on top of the beef.
