  • 1 cup black beans, drained and rinsed

  • Sour cream, for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Toss the diced potatoes with olive oil, salt, and pepper, then spread them on a baking sheet. Bake for 25-30 minutes until crispy and golden brown.
  2. Cook the ground meat in a skillet over medium heat, breaking it up as it cooks until browned. Drain excess fat and stir in taco seasoning.
  3. Layer the ingredients in a bowl starting with the crispy potatoes, followed by seasoned meat, black beans, corn, diced tomatoes, and shredded cheese.
