Quick and delicious low carb wraps filled with garlicky chicken and melted mozzarella, perfect for any occasion.

- 1 pound (450g) boneless, skinless chicken breasts, thinly sliced
- 4 cloves garlic, minced (about 1 tablespoon)
- 1 cup (100g) shredded mozzarella cheese
- 4 large low carb tortillas
- 2 tablespoons (30ml) extra virgin olive oil
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped (optional)
- ½ teaspoon red pepper flakes (optional)
Instructions
- Start by slicing the chicken breasts into thin strips or bite-sized pieces.
- Mince the garlic cloves finely and chop the parsley if you’re using it for garnish.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken pieces in a single layer and let them cook undisturbed for 2-3 minutes.
- Stir the chicken and cook for another 3-4 minutes until it’s fully cooked through.
- Lower the heat to medium. Add the minced garlic, Italian seasoning, optional red pepper flakes, salt, and black pepper.
- Stir constantly for about 1-2 minutes until the garlic becomes fragrant.
- Sprinkle the shredded mozzarella evenly over the chicken and cover.
- Once the cheese is melted and bubbly, sprinkle fresh parsley over it.
- Warm your low-carb tortillas briefly to make them pliable.
- Spoon the cheesy garlic chicken mixture onto each tortilla and roll them up snugly.
- Toast the wraps in the skillet for 1-2 minutes per side if desired.
- Serve the wraps hot, optionally with a side salad or roasted veggies.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for 2-3 months.
