- 1 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour, spooned and leveled
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/2 cup Lucky Charms marshmallows, plus extra for topping
Instructions
- Heat your oven to 350°F and line three baking sheets with parchment paper.
- Beat the softened butter and granulated sugar together in a mixing bowl for about 2 minutes.
- Add in the egg, egg yolk, and vanilla extract; mix until smooth.
- Stir in the flour, baking soda, and sea salt until no dry streaks remain.
- Fold in the Lucky Charms marshmallows gently.
- Portion the cookie dough onto the prepared baking sheets, spacing them apart.
- Bake for about 10 minutes, rotating halfway through.
- Press a few reserved marshmallows onto the tops of the cookies immediately after baking.
- Let them rest for 5 minutes before transferring to a wire rack to cool completely.
