Description

Delicious and hearty breakfast burritos that can be made ahead and stored in the freezer for quick meals.


Ingredients

  • 6 large eggs
  • 1 cup tater tots
  • 1 pound sausage
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 large tortillas
  • Salt and pepper to taste
  • Optional: diced vegetables (e.g., bell peppers, onions)
  • Optional: salsa for serving

Instructions

  1. In a large skillet, cook the sausage over medium heat until it’s browned and cooked through. Drain the excess fat and set the sausage aside.
  2. In the same skillet, scramble the eggs seasoned with salt and pepper until they’re fully cooked.
  3. Add the cooked sausage and tater tots to the skillet with the eggs. Mix everything to combine the flavors.
  4. Lay a tortilla flat on a clean surface. Spoon the egg mixture onto one side of the tortilla, then sprinkle with cheese. Roll the tortilla tightly, folding in the sides as you go.
  5. Repeat this process with the remaining tortillas and the egg mixture.
  6. Wrap each burrito in plastic wrap, then place them in a freezer bag and freeze.
  7. When you’re ready to enjoy a burrito, remove it from the freezer, unwrap it, and microwave until warmed through, or bake in the oven at 350°F for 20-25 minutes.

Notes

These burritos can be stored in the fridge for up to 3 days, or freeze for up to three months.
