Delicious and hearty breakfast burritos that can be made ahead and stored in the freezer for quick meals.
Ingredients

- 6 large eggs
- 1 cup tater tots
- 1 pound sausage
- 1 cup shredded cheese (cheddar or your choice)
- 4 large tortillas
- Salt and pepper to taste
- Optional: diced vegetables (e.g., bell peppers, onions)
- Optional: salsa for serving
Instructions
- In a large skillet, cook the sausage over medium heat until it’s browned and cooked through. Drain the excess fat and set the sausage aside.
- In the same skillet, scramble the eggs seasoned with salt and pepper until they’re fully cooked.
- Add the cooked sausage and tater tots to the skillet with the eggs. Mix everything to combine the flavors.
- Lay a tortilla flat on a clean surface. Spoon the egg mixture onto one side of the tortilla, then sprinkle with cheese. Roll the tortilla tightly, folding in the sides as you go.
- Repeat this process with the remaining tortillas and the egg mixture.
- Wrap each burrito in plastic wrap, then place them in a freezer bag and freeze.
- When you’re ready to enjoy a burrito, remove it from the freezer, unwrap it, and microwave until warmed through, or bake in the oven at 350°F for 20-25 minutes.

These burritos can be stored in the fridge for up to 3 days, or freeze for up to three months.
