Description

Ingredients

  • 3 boneless skinless chicken breasts (sliced thin)
  • 1 quart heavy cream
  • 3 cups low-sodium chicken broth
  • 4 tablespoons butter
  • 1/2 cup flour
  • 7 oz sun-dried tomatoes
  • 1 onion (diced)
  • 8 cloves garlic (minced)
  • 1/2 cup basil (chopped)
  • 1 cup parmesan cheese (shredded)
  • 2 lbs Yukon Gold potatoes (peeled and chopped)

Instructions

  1. Melt butter in a large pot over medium-high heat until bubbling.
  2. Add diced onion and sauté until translucent (3-4 minutes).
  3. Stir in minced garlic and cook for another minute.
  4. Add flour to create a roux; cook until golden brown.
  5. Gradually add chicken broth and heavy cream, stirring to combine and bring to a simmer.
  6. Incorporate chopped potatoes and sun-dried tomatoes; cook until potatoes are tender (15-20 minutes).
  7. Add sliced chicken and parmesan cheese; stir until cheese melts and soup is well combined.
  8. Finish with fresh chopped basil before serving.

Notes

Serve warm, garnished with extra basil and parmesan cheese. Pairs well with crusty bread or fresh salad.
