- 3 cups low-sodium chicken broth

- 1/2 cup flour
- 7 oz sun-dried tomatoes
- 1 onion (diced)
- 8 cloves garlic (minced)
- 1/2 cup basil (chopped)
- 1 cup parmesan cheese (shredded)
- 2 lbs Yukon Gold potatoes (peeled and chopped)
Instructions
- Melt butter in a large pot over medium-high heat until bubbling.
- Add diced onion and sauté until translucent (3-4 minutes).
- Stir in minced garlic and cook for another minute.
- Add flour to create a roux; cook until golden brown.
- Gradually add chicken broth and heavy cream, stirring to combine and bring to a simmer.
- Incorporate chopped potatoes and sun-dried tomatoes; cook until potatoes are tender (15-20 minutes).
- Add sliced chicken and parmesan cheese; stir until cheese melts and soup is well combined.
- Finish with fresh chopped basil before serving.
Notes
