Description
Juicy, herby Mediterranean Chicken Gyros wrapped in warm pita and topped with creamy feta tzatziki. Perfect for weeknights or entertaining.
Ingredients
For the chicken & marinade:
1.5 lb boneless, skinless chicken thighs or breast
3 tbsp olive oil
Juice of 1 lemon
3 garlic cloves, minced
1 tbsp dried oregano
1 tsp ground cumin
Salt & pepper to taste
For creamy feta tzatziki:
1 cup Greek yogurt
½ cucumber, grated & drained
¼ cup crumbled feta
1 tbsp lemon juice
1 garlic clove, minced
1 tbsp fresh dill or mint, chopped
Salt & pepper to taste
For assembly:
Warm pita bread
Lettuce, tomato slices, red onion
Instructions
1. In a bowl, whisk olive oil, lemon juice, garlic, oregano, cumin, salt & pepper.
2. Add chicken, coat well, and marinate at least 30 minutes (up to 4 hours).
3. Mix tzatziki ingredients in separate bowl; chill.
4. Preheat grill or skillet over medium-high heat.
5. Remove chicken from marinade and cook ~4–6 min per side until internal temp is 165°F.
6. Let rest 5 minutes, then slice into strips.
7. To assemble, warm pita, layer chicken, veggies, and generous tzatziki.
8. Serve immediately.
Notes
Don’t overcook the chicken or it becomes dry.
Drain grated cucumber well to prevent watery tzatziki.
Make tzatziki ahead to let flavors meld.
