- 500 g chicken breasts
- 60 ml lemon juice
- 30 ml olive oil
- 3 cloves garlic, minced
- 100 g feta cheese, crumbled
- 250 g cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 small red onion, thinly sliced
- 30 g fresh parsley, chopped
- 150 g quinoa, uncooked
- Salt to taste
- Pepper to taste
Instructions
- Cook the quinoa according to package instructions. This usually involves rinsing it, boiling water, and letting it simmer until fluffy.
- In a bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper.
- Marinate the chicken breasts in this mixture for at least 30 minutes to intensify the flavor.
- Grill or pan-cook the chicken until it’s fully cooked, approximately 6-7 minutes on each side.
- Once cooked, slice the chicken into thin strips and set aside.
- In serving bowls, layer the cooked quinoa, diced cucumber, halved cherry tomatoes, and sliced red onion.
- Top your bowls with sliced chicken, crumbled feta cheese, and fresh parsley.
- If you have leftover marinade, feel free to drizzle it on top before serving.
