Ingredients

  • 500 g chicken breasts
  • 60 ml lemon juice
  • 30 ml olive oil
  • 3 cloves garlic, minced
  • 100 g feta cheese, crumbled
  • 250 g cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 small red onion, thinly sliced
  • 30 g fresh parsley, chopped
  • 150 g quinoa, uncooked
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the quinoa according to package instructions. This usually involves rinsing it, boiling water, and letting it simmer until fluffy.
  2. In a bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper.
  3. Marinate the chicken breasts in this mixture for at least 30 minutes to intensify the flavor.
  4. Grill or pan-cook the chicken until it’s fully cooked, approximately 6-7 minutes on each side.
  5. Once cooked, slice the chicken into thin strips and set aside.
  6. In serving bowls, layer the cooked quinoa, diced cucumber, halved cherry tomatoes, and sliced red onion.
  7. Top your bowls with sliced chicken, crumbled feta cheese, and fresh parsley.
  8. If you have leftover marinade, feel free to drizzle it on top before serving.
