Description

A flavorful and colorful Mediterranean Steak Bowl with marinated steak, fresh veggies, and creamy tzatziki.


Ingredients

  • 1 lb sirloin steak, about 1-inch thick
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice, fresh
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ⅓ cup feta cheese, crumbled (optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt, plain (coconut yogurt for dairy-free)
  • ½ cucumber, grated (squeezed dry)
  • 1 tablespoon lemon juice, fresh
  • 1 garlic clove, minced
  • 1 tablespoon fresh dill, chopped
  • 3 tablespoons olive oil (for vinaigrette)
  • 2 tablespoons lemon juice, fresh (for vinaigrette)
  • 1 teaspoon honey (omit for Whole30)
  • ½ teaspoon dried oregano (for vinaigrette)
  • Salt & pepper to taste (for vinaigrette)

Instructions

  1. Mix the Marinade: Combine the marinade ingredients in a small bowl. Coat the steak evenly and marinate for a minimum of 30 minutes or up to 4 hours for deeper flavor.
  2. Prepare the Tzatziki: While the steak marinates, combine the tzatziki ingredients. Give the mixture a good stir, then store it in the fridge to chill.
  3. Whisk Together Vinaigrette: In another bowl, whisk together the vinaigrette ingredients until combined. Set it aside.
  4. Sear the Steak: Heat a skillet over medium-high heat. Sear the marinated steak in the hot skillet for about 4 to 5 minutes per side, depending on desired doneness. Remove from heat and let it rest for a few minutes, then slice thinly against the grain.
  5. Assemble the Bowls: Layer your choice of grains in a bowl, top with sliced steak, and arrange cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, and fresh herbs on top. Drizzle with tzatziki and vinaigrette.
