- 2 cups cooked chicken, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup tortilla chips, crushed
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the diced cooked chicken, black beans, corn, diced tomatoes, taco seasoning, and salsa. Mix well.
- Grease a casserole dish. Spread half of the chicken mixture in the dish.
- Sprinkle half of the shredded cheese over the chicken mixture.
- Layer the remaining chicken mixture on top, followed by the crushed tortilla chips and the rest of the cheese. Add dollops of sour cream.
- Bake for about 30 minutes until the cheese is bubbly and golden brown.
- Let it cool for a few minutes and garnish with chopped cilantro before serving.
Notes
Use rotisserie chicken for convenience. This recipe is versatile; adjust based on available ingredients or dietary preferences.
