Ingredients
4 boneless chicken thighs or breasts
2 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 tsp chili powder
1 tsp paprika
1/2 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1/2 cup shredded cheese
Fresh cilantro for garnish
Instructions
1. Pat chicken dry and season with spices.
2. Heat oil in a skillet and sear chicken 5–6 minutes per side.
3. Add onions and garlic, sauté until fragrant.
4. Pour in cheese sauce and simmer until chicken reaches 165°F.
5. Let rest 5 minutes before serving.
Notes
Serve with rice, tortillas, or roasted vegetables.
You can swap chicken thighs for chicken breasts.
Store leftovers in the fridge for up to 3 days.
