- 2/3 cup packed brown sugar (light or dark)
- 3/4 cup all-purpose flour
- 2.5 teaspoons ground cinnamon
- 6 tablespoons unsalted butter (cold and cut into cubes)
- 1 1/3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 2 large eggs (at room temperature)
- 2 teaspoons pure vanilla extract
- 1/2 cup full-fat sour cream (at room temperature)
- 2 tablespoons milk (any kind)
- 1 cup confectioners’ sugar (sifted)
- 1/2 teaspoon pure vanilla extract (for icing)
- 2 tablespoons milk or heavy cream (for icing)
Instructions
- Preheat your oven to 350°F (177°C). Line an 8-inch square baking pan with parchment paper and lightly grease it.
- Mix together the brown sugar, 3/4 cup of flour, and ground cinnamon in a medium bowl. Add the cold butter cubes and form clumps. Refrigerate this mixture.
- Whisk together the 1 1/3 cups of flour, baking powder, baking soda, and salt in a large bowl.
- Beat the softened butter with granulated sugar on high speed for about 3 minutes until light and creamy.
- Add the eggs and vanilla extract to the butter mixture and beat until smooth.
- Gradually mix in the dry ingredients with the mixer on low speed, then add the milk and mix until smooth.
- Spread half the batter into the prepared pan, top with 1 cup of the crumb mixture, add the remaining batter and gently spread it.
- Top with the rest of the crumb mixture.
- Bake for 35–40 minutes or until a toothpick inserted comes out clean.
- Cool the cake for about 15 minutes then mix the icing ingredients until smooth.
- Drizzle the icing over the cake, lift it using parchment paper, slice, and serve warm or at room temperature.
Notes
Serve with coffee, tea, or a scoop of ice cream for added delight.
