Description

A delightful, buttery coffee cake spiced with cinnamon, perfect for sharing with family and friends.


Ingredients

  • 2/3 cup packed brown sugar (light or dark)
  • 3/4 cup all-purpose flour
  • 2.5 teaspoons ground cinnamon
  • 6 tablespoons unsalted butter (cold and cut into cubes)
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs (at room temperature)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup full-fat sour cream (at room temperature)
  • 2 tablespoons milk (any kind)
  • 1 cup confectioners’ sugar (sifted)
  • 1/2 teaspoon pure vanilla extract (for icing)
  • 2 tablespoons milk or heavy cream (for icing)

Instructions

  1. Preheat your oven to 350°F (177°C). Line an 8-inch square baking pan with parchment paper and lightly grease it.
  2. Mix together the brown sugar, 3/4 cup of flour, and ground cinnamon in a medium bowl. Add the cold butter cubes and form clumps. Refrigerate this mixture.
  3. Whisk together the 1 1/3 cups of flour, baking powder, baking soda, and salt in a large bowl.
  4. Beat the softened butter with granulated sugar on high speed for about 3 minutes until light and creamy.
  5. Add the eggs and vanilla extract to the butter mixture and beat until smooth.
  6. Gradually mix in the dry ingredients with the mixer on low speed, then add the milk and mix until smooth.
  7. Spread half the batter into the prepared pan, top with 1 cup of the crumb mixture, add the remaining batter and gently spread it.
  8. Top with the rest of the crumb mixture.
  9. Bake for 35–40 minutes or until a toothpick inserted comes out clean.
  10. Cool the cake for about 15 minutes then mix the icing ingredients until smooth.
  11. Drizzle the icing over the cake, lift it using parchment paper, slice, and serve warm or at room temperature.

Notes

Serve with coffee, tea, or a scoop of ice cream for added delight.
