- 3 large very ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup fresh or frozen blueberries
- Optional Crumb Topping:
- 1/2 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1/4 teaspoon ground cinnamon
- 3 tablespoons cold unsalted butter, cubed
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan to prevent sticking.
- Combine the mashed bananas, melted butter, granulated sugar, beaten egg, and vanilla extract in a large mixing bowl. Mix everything together until well combined.
- Whisk together the flour, baking soda, salt, and 1/2 teaspoon of cinnamon in another bowl.
- Gradually add the dry ingredients into the banana mixture, stirring just until combined. Be careful not to overmix; a few lumps are perfectly fine!
- Fold in the blueberries gently. If you’re using frozen blueberries, there’s no need to thaw them first; they’ll bake beautifully right from the freezer.
- Pour the batter into the prepared loaf pan and smooth the top.
- Mix the optional crumb topping ingredients in a small bowl. Cut in the cold cubed butter until it resembles coarse crumbs. Sprinkle the topping evenly over the batter.
- Bake for 55 to 65 minutes. Check for doneness by inserting a wooden skewer into the center. It should come out clean. If the top browns too quickly, loosely cover it with foil after 40 minutes.
- Let the bread cool in the pan for 10 minutes before turning it onto a wire rack to cool completely.
Notes
Serve warm with a pat of butter, honey, or maple syrup. Great as a gift when wrapped nicely.
