Description

A moist and easy recipe that combines ripe bananas and juicy blueberries for a delicious treat, perfect for brunch or a snack.


Ingredients

  • 3 large very ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup fresh or frozen blueberries
  • Optional Crumb Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons cold unsalted butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan to prevent sticking.
  2. Combine the mashed bananas, melted butter, granulated sugar, beaten egg, and vanilla extract in a large mixing bowl. Mix everything together until well combined.
  3. Whisk together the flour, baking soda, salt, and 1/2 teaspoon of cinnamon in another bowl.
  4. Gradually add the dry ingredients into the banana mixture, stirring just until combined. Be careful not to overmix; a few lumps are perfectly fine!
  5. Fold in the blueberries gently. If you’re using frozen blueberries, there’s no need to thaw them first; they’ll bake beautifully right from the freezer.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Mix the optional crumb topping ingredients in a small bowl. Cut in the cold cubed butter until it resembles coarse crumbs. Sprinkle the topping evenly over the batter.
  8. Bake for 55 to 65 minutes. Check for doneness by inserting a wooden skewer into the center. It should come out clean. If the top browns too quickly, loosely cover it with foil after 40 minutes.
  9. Let the bread cool in the pan for 10 minutes before turning it onto a wire rack to cool completely.

Notes

Serve warm with a pat of butter, honey, or maple syrup. Great as a gift when wrapped nicely.
