Ingredients

  • 1 (14 ounce) can sweetened condensed milk
  • 1/3 cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 (21 ounce) can cherry pie filling

Instructions

  1. Prepare the crust: In a small mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well and set aside.
  2. Make the cheesecake filling: In a medium mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth. Next, beat in the sweetened condensed milk until everything combines seamlessly.
  3. Add the flavor: Pour in the freshly squeezed lemon juice and vanilla extract, mixing until it’s well combined.
  4. Layer it up: Set 6 plastic, 9-ounce punch cups on the counter or a cookie sheet for easy serving. Begin by scooping 2 tablespoons of the graham cracker crumb mixture into the bottom of each cup. Press down lightly to form the base.
  5. Add the cheesecake layer: Spoon 3 tablespoons of the cheesecake mixture into each cup, spreading it out evenly.
  6. Cherry time: Next, evenly distribute half of the cherry pie filling among the 6 cups. Save the other half for the final topping.
  7. Create another layer: Sprinkle 2 tablespoons of the graham cracker crumb mixture over the cherry layer in each cup.
  8. Top it off: Divide the remaining cheesecake mixture between the 6 cups, spreading it evenly on top.
  9. Final cherry layer: Now, divide the reserved cherry pie filling evenly on top of the cheesecake mixture. For a finishing touch, sprinkle a little graham cracker crumb mixture over the cherry.
  10. Serve: Enjoy immediately or chill in the fridge for up to 24 hours before serving.
