Ingredients

  • 1 1/2 cups finely crushed graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 7 tablespoons butter (melted)
  • 1 (8 ounce) package cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 1/3 cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 (21 ounce) can cherry pie filling

Instructions

  1. Prepare the crust: Combine the finely crushed graham cracker crumbs, granulated sugar, and melted butter in a small mixing bowl. Mix and set aside.
  2. Make the cheesecake mixture: Beat the softened cream cheese in a medium mixing bowl with an electric mixer until smooth, then add the sweetened condensed milk and blend.
  3. Add citrus and flavor: Mix in the lemon juice and vanilla extract until well combined.
  4. Layering time: Set out six plastic 9-ounce punch cups and scoop about 2 tablespoons of the graham cracker mixture into each cup, pressing down lightly.
  5. Add the cheesecake mixture on top of the crumb layer in each cup and spread evenly.
  6. Cherry layer: Distribute half of the cherry pie filling between the six cups, reserving the other half.
  7. More crust, more cheesecake: Sprinkle about 2 tablespoons of the graham cracker mixture over the cherry layer in each cup, then evenly divide the remaining cheesecake mixture among the cups and spread it out.
  8. Top it off: Divide the rest of the cherry pie filling among the six cups and sprinkle some additional graham cracker mixture on top.
  9. Serve or chill: Enjoy immediately or cover and chill for up to 24 hours before serving.
