- 7 tablespoons butter (melted)
- 1 (8 ounce) package cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk
- 1/3 cup freshly squeezed lemon juice
- 1 teaspoon vanilla extract
- 1 (21 ounce) can cherry pie filling
Instructions
- Prepare the crust: Combine the finely crushed graham cracker crumbs, granulated sugar, and melted butter in a small mixing bowl. Mix and set aside.
- Make the cheesecake mixture: Beat the softened cream cheese in a medium mixing bowl with an electric mixer until smooth, then add the sweetened condensed milk and blend.
- Add citrus and flavor: Mix in the lemon juice and vanilla extract until well combined.
- Layering time: Set out six plastic 9-ounce punch cups and scoop about 2 tablespoons of the graham cracker mixture into each cup, pressing down lightly.
- Add the cheesecake mixture on top of the crumb layer in each cup and spread evenly.
- Cherry layer: Distribute half of the cherry pie filling between the six cups, reserving the other half.
- More crust, more cheesecake: Sprinkle about 2 tablespoons of the graham cracker mixture over the cherry layer in each cup, then evenly divide the remaining cheesecake mixture among the cups and spread it out.
- Top it off: Divide the rest of the cherry pie filling among the six cups and sprinkle some additional graham cracker mixture on top.
- Serve or chill: Enjoy immediately or cover and chill for up to 24 hours before serving.
