- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups old-fashioned oats
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup cream cheese, softened
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Mix together the oats, all-purpose flour, baking soda, ground cinnamon, and salt in another bowl.
- Gradually add the oat mixture to the creamed mixture, mixing until combined.
- Drop spoonfuls of dough onto ungreased baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes or until the edges turn golden brown.
- Let the cookies cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.
- Beat together the softened cream cheese and powdered sugar until smooth and well combined.
- Take one cookie, spread a generous amount of cream cheese filling on the bottom, and sandwich with another cookie.
Notes
Serve with cold milk or warm coffee. Add sea salt for a sweet-and-salty twist.
