Description

Delicious oatmeal cream pie cookies filled with a creamy filling, reminiscent of childhood memories.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups old-fashioned oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix together the oats, all-purpose flour, baking soda, ground cinnamon, and salt in another bowl.
  5. Gradually add the oat mixture to the creamed mixture, mixing until combined.
  6. Drop spoonfuls of dough onto ungreased baking sheets, leaving space between each cookie.
  7. Bake for 10-12 minutes or until the edges turn golden brown.
  8. Let the cookies cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.
  9. Beat together the softened cream cheese and powdered sugar until smooth and well combined.
  10. Take one cookie, spread a generous amount of cream cheese filling on the bottom, and sandwich with another cookie.

Notes

Serve with cold milk or warm coffee. Add sea salt for a sweet-and-salty twist.
