Ingredients

  • 1/3 cup cornstarch
  • 1/2 teaspoon salt
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 45 ripe bananas, sliced
  • 1 box vanilla wafers

Instructions

  1. Combine the milk, sugar, cornstarch, and salt in a medium saucepan over medium heat, stirring continuously until smooth and thickened (5-7 minutes).
  2. Whisk the egg yolks in a separate bowl and temper by adding hot mixture gradually while whisking.
  3. Pour the tempered yolk mixture back into the saucepan.
  4. Continue cooking for another 2 minutes while stirring, then remove from heat and stir in butter and vanilla until melted.
  5. Layer your serving dish with vanilla wafers, banana slices, and pudding mixture until all ingredients are used, finishing with pudding.
  6. Chill in the refrigerator for at least 2 hours before serving.

Notes

Use ripe bananas for the best flavor. Ensure to temper the egg yolks properly to prevent curdling.
