- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1/2 cup milk
- 1 tablespoon baking powder
- Zest of 1 lemon
- 1/2 cup fresh lemon juice
- A pinch of salt
- Powdered sugar for glazing (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a round cake pan or line it with parchment paper for easy removal.
- Combine the flour, sugar, baking powder, and salt in a large mixing bowl, mixing them well for an even distribution.
- Add in the softened butter, eggs, milk, lemon zest, and lemon juice.
- Mix until everything is well combined. The batter should be smooth and creamy by the end.
- Pour the batter into the prepared cake pan, spreading it evenly with a spatula.
- Bake for 25-30 minutes. You’ll know it’s done when a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for a few minutes. Then, gently transfer it to a wire rack to cool completely.
- If you’d like, drizzle it with a light glaze made from powdered sugar and lemon juice before serving.
Notes
Use fresh lemon juice and zest for the best flavor. Don’t overmix the batter to keep the cake fluffy.
