Description

A delightful combination of juicy steak, tender tortellini, fresh spinach, and bright cherry tomatoes in a rich buttery sauce, perfect for family gatherings or weeknight dinners.

Ingredients

Scale
  • 8 oz tortellini
  • 1 lb steak (sirloin or ribeye)
  • 4 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 2 cups spinach

Instructions

  1. Start by cooking the tortellini according to the package instructions. Once it’s al dente, drain the pasta and set it aside for later.
  2. Grab a large skillet and place it over medium-high heat. Melt the butter in the skillet, letting it become fragrant and bubbly.
  3. Add the steak bites to the skillet and season them with salt, pepper, and paprika. Sear the steak for about 3-4 minutes on each side until they develop a beautiful golden-brown color and reach your desired doneness.
  4. Toss in the minced garlic and stir it around for an additional minute. The aroma will be heavenly!
  5. Next, add the cherry tomatoes and spinach. Cook until the spinach wilts and the tomatoes soften a bit. This should take about 2-3 minutes.
  6. Finally, gently toss in the cooked tortellini, mixing everything together so that the pasta gets coated in that scrumptious buttery sauce.
  7. Remove the skillet from the heat and sprinkle fresh parsley on top before serving.

Notes

For extra flavor, serve with grated Parmesan cheese and consider pairing with a light arugula salad or garlic bread.
