- 8 oz tortellini
- 1 lb steak (sirloin or ribeye)
- 4 tbsp unsalted butter
- 3 garlic cloves, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 2 cups spinach
Instructions
- Start by cooking the tortellini according to the package instructions. Once it’s al dente, drain the pasta and set it aside for later.
- Grab a large skillet and place it over medium-high heat. Melt the butter in the skillet, letting it become fragrant and bubbly.
- Add the steak bites to the skillet and season them with salt, pepper, and paprika. Sear the steak for about 3-4 minutes on each side until they develop a beautiful golden-brown color and reach your desired doneness.
- Toss in the minced garlic and stir it around for an additional minute. The aroma will be heavenly!
- Next, add the cherry tomatoes and spinach. Cook until the spinach wilts and the tomatoes soften a bit. This should take about 2-3 minutes.
- Finally, gently toss in the cooked tortellini, mixing everything together so that the pasta gets coated in that scrumptious buttery sauce.
- Remove the skillet from the heat and sprinkle fresh parsley on top before serving.
Notes
For extra flavor, serve with grated Parmesan cheese and consider pairing with a light arugula salad or garlic bread.
