- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic (minced)
- 2 tablespoons Soy Sauce
- 1 each Bell Peppers (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Begin by prepping your ingredients. Slice the kielbasa into bite-sized pieces, chop the bell peppers, and halve the baby potatoes.
- Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, toss in the sliced kielbasa. Sauté for about 5-7 minutes until the sausage gets a bit of color.
- Add the minced garlic to the skillet and sauté for about 1 minute.
- Now, add the bell peppers, baby carrots, and baby potatoes to your kielbasa. Stir everything together.
- Drizzle the honey and soy sauce over the mixture. Stir well.
- Reduce the heat to medium-low, cover the skillet, and let everything cook for about 10-15 minutes, stirring occasionally.
- Before serving, sprinkle chopped parsley or green onions over the top.
Notes
Pairs beautifully with a side salad or crusty bread. Can store leftovers in an airtight container for 3-4 days.
