Ingredients

  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic (minced)
  • 2 tablespoons Soy Sauce
  • 1 each Bell Peppers (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Begin by prepping your ingredients. Slice the kielbasa into bite-sized pieces, chop the bell peppers, and halve the baby potatoes.
  2. Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, toss in the sliced kielbasa. Sauté for about 5-7 minutes until the sausage gets a bit of color.
  3. Add the minced garlic to the skillet and sauté for about 1 minute.
  4. Now, add the bell peppers, baby carrots, and baby potatoes to your kielbasa. Stir everything together.
  5. Drizzle the honey and soy sauce over the mixture. Stir well.
  6. Reduce the heat to medium-low, cover the skillet, and let everything cook for about 10-15 minutes, stirring occasionally.
  7. Before serving, sprinkle chopped parsley or green onions over the top.

Notes

Pairs beautifully with a side salad or crusty bread. Can store leftovers in an airtight container for 3-4 days.
