Description

A delicious and easy one-pan meal featuring kielbasa, veggies, and a sweet honey garlic sauce, perfect for busy weeknights.


Ingredients

  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce
  • 1 each Bell Peppers (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the kielbasa into bite-sized pieces.
  3. Chop the bell peppers into strips or chunks.
  4. Mix together the sliced kielbasa, bell peppers, baby carrots, and baby potatoes in a large bowl.
  5. Whisk together honey, minced garlic, soy sauce, and olive oil in a small bowl.
  6. Pour the mixture over the sausage and veggies and toss well to coat.
  7. Spread the mixture evenly on a baking sheet lined with parchment paper.
  8. Roast in the oven for about 30 minutes, stirring halfway through.
  9. Sprinkle with fresh parsley or green onions before serving.

Notes

Serve directly from the oven or over rice for a complete meal. Drizzle with extra honey for added sweetness.
