- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic, minced
- 2 tablespoons Soy Sauce
- 1 each Bell Peppers (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the kielbasa into bite-sized pieces.
- Chop the bell peppers into strips or chunks.
- Mix together the sliced kielbasa, bell peppers, baby carrots, and baby potatoes in a large bowl.
- Whisk together honey, minced garlic, soy sauce, and olive oil in a small bowl.
- Pour the mixture over the sausage and veggies and toss well to coat.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Roast in the oven for about 30 minutes, stirring halfway through.
- Sprinkle with fresh parsley or green onions before serving.
Notes
Serve directly from the oven or over rice for a complete meal. Drizzle with extra honey for added sweetness.
