- 2 chicken breasts
- 8 oz rigatoni pasta
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Once hot, add the minced garlic and sauté it until fragrant—this should take about a minute.
- Season the chicken breasts with salt, pepper, and Italian seasoning. Place them into the pot and cook until they turn a lovely golden brown on both sides. Once done, remove the chicken and set it aside on a plate.
- Add the rigatoni and marinara sauce to the same pot, stirring everything together so the pasta gets coated beautifully. Now, place the chicken on top of the pasta mixture.
- Pour in enough water to cover the pasta and chicken. Bring the pot to a boil, then reduce the heat to a simmer. Cover it up and let it cook for about 15-20 minutes, or until the pasta is al dente and the chicken is cooked through.
- Remove the chicken from the pot, shred it with a fork, and mix it back into the pasta.
- Stir in the shredded mozzarella and grated Parmesan cheese. Mix until everything is melted and creamy.
- Garnish your dish with fresh basil before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for 2-3 months.
