One-Pot Chicken Parmesan Pasta

Description

A comforting and easy dish that brings the family together with tender chicken, rich marinara, and gooey mozzarella—all made in one pot.


Ingredients

  • 2 chicken breasts
  • 8 oz rigatoni pasta
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Once hot, add the minced garlic and sauté it until fragrant—this should take about a minute.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning. Place them into the pot and cook until they turn a lovely golden brown on both sides. Once done, remove the chicken and set it aside on a plate.
  3. Add the rigatoni and marinara sauce to the same pot, stirring everything together so the pasta gets coated beautifully. Now, place the chicken on top of the pasta mixture.
  4. Pour in enough water to cover the pasta and chicken. Bring the pot to a boil, then reduce the heat to a simmer. Cover it up and let it cook for about 15-20 minutes, or until the pasta is al dente and the chicken is cooked through.
  5. Remove the chicken from the pot, shred it with a fork, and mix it back into the pasta.
  6. Stir in the shredded mozzarella and grated Parmesan cheese. Mix until everything is melted and creamy.
  7. Garnish your dish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for 2-3 months.
