- 2 large eggs
- 1 teaspoon vanilla extract

- ½ teaspoon salt
- 1 cup crushed Oreo cookies (about 10–12 Oreos)
- Green food coloring (optional, for shamrock shake color)
- ½ cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract, mint extract, and green food coloring if desired.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the crushed Oreo cookies and mini chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10–12 minutes, or until edges are lightly golden and centers are still soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container for up to 5 days or freeze for 2-3 months. To reheat, thaw at room temperature or warm in the microwave for about 10-15 seconds.
