Ingredients

  • 2 cups green beans, trimmed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the diced potatoes and green beans.
  3. Drizzle with olive oil and add minced garlic, salt, pepper, paprika, and thyme.
  4. Toss everything together until the vegetables are well-coated in the seasonings.
  5. Spread the mixture on a baking sheet in a single layer.
  6. Roast in the oven for 25-30 minutes or until the potatoes are tender and lightly browned, stirring halfway through.
