- 2 cups green beans, trimmed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the diced potatoes and green beans.
- Drizzle with olive oil and add minced garlic, salt, pepper, paprika, and thyme.
- Toss everything together until the vegetables are well-coated in the seasonings.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes or until the potatoes are tender and lightly browned, stirring halfway through.
- Serve hot as a delicious side dish, and watch it disappear!
Notes
For best results, cut potatoes uniformly and avoid overcrowding on the baking sheet.
